Who doesn't love a good piece of toast to kick start the day (um, no one)? Toast was the breakfast of choice in my house growing up (kidding, fruit loops were but fruit loops were for special occasions which meant we only savoured the rainbow rings of joy about as often as we enjoyed the sight of a blue moon). In recent years, I've become a big fan of the classic avo mash on toast, there is so much goodness in avocados, including high levels of potassium and fibre. Another more recent favourite I discovered when Catherine brought me back a jar of Maple butter from Canada: Maple butter and strawberries on toast with cinnamon. Killer.
The other week we gathered together various toppings and a fresh loaf of fruit toast and created 4 marriages in heaven that wouldn't have left a dry eye in a room of foodies. Seriously guys, these were good.
Toast Base
- Fruit loaf (we used raisin bread)
Ricotta cheese, spread thickly
Strawberry & Thyme
- 6 ripe strawberries
- Small bunch of thyme
Banana & Walnut
- Ripe banana
- Quarter cup of walnuts, chopped roughly
- 2 Tbs of honey
Blueberry & Pepita
- Half a cup of fresh blueberries
- 2 tsp of pepitas
- Half a tsp of cinnamon
Fig & Almond
- 2 figs
- Quarter cup of blanched almonds
- 2 Tbs of honey
Toast the fruit loaf and spread with ricotta, then add your preferred topping! Each recipe makes 2 slices of toast.
